&lt;p&gt;&lt;strong&gt;Total Time:&lt;/strong&gt; 40 min.&lt;/p&gt;
&lt;p&gt;To make this crumb base, we pulsed whole cookies in a food processor for 1 minute before adding butter and fudge sauce.&lt;/p&gt;
&lt;h2&gt;Ingredients&lt;/h2&gt;
&lt;ul&gt;&lt;li&gt;4 cups / 1 L &lt;em&gt;Sensations by Compliments&lt;/em&gt; Natural Vanilla Ice Cream&lt;/li&gt;
&lt;li&gt;4 cups / 1 L &lt;em&gt;Sensations by Compliments&lt;/em&gt; Mochachino Almond Fudge Ice Cream&lt;/li&gt;
&lt;li&gt;2 cups / 500 ml coarsely ground chocolate chip cookie crumbs (approx. 15 cookies)&lt;/li&gt;
&lt;li&gt;1 tbsp / 15ml unsalted butter, melted&lt;/li&gt;
&lt;li&gt;1 cup / 250 ml fudge sauce, divided&lt;/li&gt;
&lt;li&gt;1/4 cup / 60 ml &lt;em&gt;Compliments&lt;/em&gt; Slivered Almonds, toasted&lt;/li&gt;
&lt;li&gt;Fresh raspberries, for garnish&lt;/li&gt;
&lt;/ul&gt;&lt;h2&gt;Directions&lt;/h2&gt;
&lt;ol&gt;&lt;li&gt;Line the bottom and sides of a 9-in. (23 cm) springform pan with parchment paper. Allow ice cream to soften at room temperature for 8 to 10 min., until malleable. Meanwhile, combine cookie crumbs, melted butter and 1/4 cup (60 mL) fudge sauce in a bowl. Mix well and press into the bottom of the pan.&lt;/li&gt;
&lt;li&gt;Working quickly, spread vanilla ice cream in an even layer over the cookie base. Drizzle with 2 tbsp (30 mL) of fudge sauce, then add an even layer of mochachino ice cream overtop. (If ice cream is melting too quickly, cover with plastic wrap and refreeze before adding the second layer). Cover with plastic wrap and freeze for at least 4 hours.&lt;/li&gt;
&lt;li&gt;Spread remaining fudge sauce overtop of the cake, covering completely. Sprinkle with almonds, cover with plastic wrap and store in the freezer. To serve, release the side of springform pan and remove parchment paper. Heat a knife in hot water and dry with a kitchen towel before slicing (you may need to reheat between slices). Garnish each plate with a few raspberries.&lt;/li&gt;

&lt;li&gt;1 large egg, lightly beaten&lt;/li&gt;

&lt;li class="li3"&gt;Meanwhile, combine water and yeast in large bowl of heavy-duty stand mixer; let stand until yeast dissolves, about 5 minutes. Add milk mixture, sugar, eggs and salt. Using dough hook, mix on high speed until eggs are blended. Gradually mix in 4 1/4 cups flour. Continue kneading on medium speed until dough is smooth and pulls away from sides of bowl, adding more flour if necessary, about 5 minutes. Remove dough from bowl; form into ball. Sprinkle some flour into bottom of mixing bowl; return dough to bowl. Cover and chill overnight.&lt;/li&gt;
&lt;/ol&gt;&lt;p class="p3"&gt;&lt;em&gt;for the coffeecake:&lt;/em&gt;&lt;/p&gt;
&lt;ol class="ol1"&gt;&lt;li class="li3"&gt;Spray 10-inch-diameter angel food cake pan with nonstick spray. Sprinkle pecans evenly over bottom of pan. Punch dough down. Roll out dough on lightly floured work surface to 10-inch square. Cut dough into five 2-inch-wide strips. Cut each strip into five 2-inch squares, creating 25 pieces total.&lt;/li&gt;
&lt;li class="li3"&gt;Combine brown sugar and cinnamon in medium bowl. Dip each dough piece into melted butter, then into brown sugar mixture, coating each piece evenly. Transfer each piece to waxed paper-lined baking sheet.&lt;/li&gt;
&lt;li class="li3"&gt;Combine all remaining melted butter (about 2 tablespoons) with all remaining brown sugar mixture (2 to 3 tablespoons). Stir 3 tablespoons honey into brown sugar mixture. &lt;li&gt;1/4 teaspoon salt&lt;/li&gt;

&lt;li&gt;3 ounces white chocolate (with cocoa butter), coarsely chopped&lt;/li&gt;

Add butter and red food coloring. Process with on/off turns until mixture resembles fine crumbs. Process until mixture just forms a ball.*&lt;/li&gt;
&lt;li&gt;On a lightly floured surface, knead dough lightly until nearly smooth. Roll or pat dough to a 1/2-inch thickness. Using a floured 1-1/2-inch round cutter, cut out dough. Place cutouts 1 inch apart on an ungreased cookie sheet. Press scraps together and reroll.&lt;/li&gt;
&lt;li&gt;Bake in the preheated oven for 20 to 25 minutes or until centers are set. Transfer cookies to a wire rack; let cool.&lt;/li&gt;
&lt;li&gt;In a heavy small saucepan, melt white chocolate and shortening over low heat, stirring constantly. Dip half of each cookie into melted chocolate. If desired, sprinkle with pistachios or nonpareils. Let stand on waxed paper until set. Makes about 24 cookies.&lt;/li&gt;
